Unlike supermarket brands, we don't bottle our entire production at once. Our oil is stored in stainless steel tanks under nitrogen and bottled in small runs as its needed, meaning the oil spends very little to no time on the shelf before reaching our customers.
While dark glass certainly helps reduce light exposure, it's only one part of proper olive oil storage. A bottle in dark glass that's left beside a hot stove, in direct sunlight, or with the cap left off will still deteriorate due to heat and oxidation.
We encourage all of our customers to store their olive oil in a cool, dark place with the cap sealed after use. By combining careful bulk storage, small-batch bottling, and good storage practices at home, we're confident our oil reaches customers in excellent condition.
