Our Story

We didn’t grow up farmers.

We became them.


What began as a half-serious idea tossed around during the peak of COVID — a daydream of swapping spreadsheets, classrooms and strategy sessions for a slower, more grounded life. With backgrounds in accounting, teaching, and business analysis, we found ourselves longing for something more hands-on, meaningful, and rooted in the real world.

What started as a light-hearted escape plan soon took root. We left behind our city jobs and planted ourselves (quite literally) among the olive trees of North West Tasmania. Today, we’re a small, hands-on family team of three, pouring our energy into every part of the process — from pruning and picking to pressing and pouring.

Our Extra Virgin Olive Oil is a reflection of our journey: thoughtful, bold, and proudly Tasmanian. We embrace sustainable, low-impact farming and traditional methods, not just because they produce better oil, but because they honour the land and the life we've chosen.

Our Grove

Our grove is more than just a collection of trees — it’s the heart of everything we do. Planted by hand in 1999 and nurtured with care, each of our 2,000 olive trees tells a story of patience, passion, and learning by doing.

Situated at the southernmost point in Australia where olives are grown, our Tasmanian grove experiences a cool climate that slows the ripening process, allowing complex flavours to develop in every olive. It also means our harvest happens later than most — but good things are always worth waiting for.

From the mighty Manzanillo to the notorious Nevadillo, our mix of varieties brings richness and depth to our oil, with something to suit every taste.

Our Produce

Every jar and bottle from Wattle Hill Olives is proudly single provenance — grown, harvested and bottled right here on our 21-acre farm in North West Tasmania. We take pride in producing Extra Virgin Olive Oil that comes entirely from our own grove, with no blending, no outsourcing, and complete traceability all the way from branch to bottle.

Our olives are hand-picked just before the peak of ripeness, then carefully milled within minutes on-site to preserve their full flavour intensity and nutritional goodness. The result is a unique peppery and herbaceous oil that reflects not only the quality of our fruit, but the care and commitment that goes into every harvest.
