Meet Emily

If you’ve ever wondered who’s behind the bottles of our rich, golden Extra Virgin Olive Oil – meet Emily, one of our passionate owners!

Originally from the beautiful Hunter Valley, Emily spent years working in Sydney before trading city life for the peaceful rhythm of rural Tasmania. With a background as a science teacher, she brings a curious mind, a deep love of nature, and an eye for detail to everything we do.

Emily is our go-to for all things Olives and Extra Virgin Olive Oil – and if you’ve enjoyed our oil or our fragrant dukkah, chances are she had a big hand in it.

These days, she’s welcoming guests to our newly opened farm stay, the Olive Leaf Retreat, where you can unwind among the groves and experience firsthand where the magic happens.

Meet Trish

Let us introduce you to Trish, one of the passionate owners of Wattle Hill Olives and the driving force behind so many of our exciting new ideas!

With a background as a business trainer, Trish has a true talent for turning vision into reality. Whether she’s brainstorming our next big offering or refining the experience at the grove, she’s always thinking a few steps ahead. Her passion lies in creating unique opportunities for you to experience Wattle Hill Olives firsthand – and she’s just getting started.

Trish is deeply committed to sharing the lifestyle we love while building a family legacy for future generations to enjoy. Right now, she’s been busy enhancing our farm gate shop and café, with some exciting updates in the works… so stay tuned

Meet Coen

Say hello to Coen, one of the driving forces behind Wattle Hill Olives – and the man who proves that farming and technology go hand in hand!

By day, Coen works as a business analyst in IT, but his true passion lies in harnessing the potential of the Earth beneath our feet to grow the best olives and produce incredible Extra Virgin Olive Oil. With a mind for problem-solving and a love for the land, Coen brings a modern edge to traditional farming.

Whether he’s repairing irrigation systems, fertilising the trees, or installing smart sensors that let him manage the grove straight from his phone – Coen is always finding smarter, more efficient ways to care for our trees.

Most days, you’ll find him on the tractor or learning the ins and outs of our new olive oil press — all in pursuit of the perfect pour.

Meet Mavis and Rosie

Whilst we like to think we run the show here at Wattle Hill Olives, let’s be honest – it’s actually Mavis and Rosie who keep things ticking!

🐩Mavis is our dedicated chief superviser, She takes her role very seriously, making sure no tractor ride goes uninspected and sniffing everything that comes through the grove. Nothing escapes her nose – not a boot, a box, or a bucket of olives. You’ll often find her keeping a close eye on the team... from a very comfy, sunny spot, of course.

🐕 Rosie, on the other hand, is our is our enthusiastic hospitality manager. Her mission? To ensure no snack goes uneaten – whether it was meant for her or not. Her quality control method involves the occasional taste test of fallen olives 🍽️. She’s also an expert in “accidentally” being underfoot when food appears and greeting visitors with enthusiastic tail wags.

Together, Mavis and Rosie make sure the farm runs with maximum charm and minimum crumbs. Come say hi next time you visit – they’ll be waiting (especially if you bring snacks). 🦴
