Our most anticipated release of the year is almost here.

Each season, we set aside a small batch of Early Harvest Extra Virgin Olive Oil — made from the very first green olives picked straight from the tree. It’s bold, vibrant, and intensely fresh, with the herbaceous, grassy and peppery notes Wattle Hill is known for.

What makes it even more special?
Because of Tasmania’s cool climate, our harvest happens later than anywhere else in Australia. This slower ripening allows the fruit to develop deeper complexity while still delivering that bright, green intensity of early-picked olives.

The result is a limited release oil that’s both fresh and layered — something truly unique to our grove.

We only produce a small quantity each year, and it never lasts long.

Will the polyphenol levels be shared?

Absolutely, we normally get our chemical and sensory results back from the laboratory within a month after the oil is released.

Once these are available we will put the results up for you to view

We do everything in house and we're proud to be single origin and single provenance producers.
